My experience : Do I have to stop at the end of my birth control packet?

Do I have to stop at the end of my birth control packet? I’ve been on BC for almost 2 years, taking it continuously so I don’t get a period. I want to get off though due to it affecting my mental health, and I’m planning on doing it this month. My last pill of this packet I would take on Tuesday the 22nd at night. However thanksgiving, is Thursday and I kinda don’t want to be in a tremendous amount of pain for thanksgiving. My periods are awful due to my endometriosis so I’m expecting it to be pretty rough coming off. Would it be ok to start a new packet and just take one pill Wednesday evening and then stop? How important is it to stop at the end of the packet? I don’t want to mess anything up!
